Sticky Date Cake


Sticky Date Cake 

Ingredients:
125g pitted dates, chopped
1/2 tsp baking soda
160g boiling water
125g Liv butter, softened
70g brown sugar
1 tsp Cointreau
1 egg
1 cup plain flour
1 tsp baking powder

Method:
1.  Place dates & bicarbonate of soda in a heatproof bowl. Pour over boiling water. Allow to stand, uncovered, for 10mins until dates are tender.

2. Using an electric mixer, beat butter, sugar &Cointreau until pale & creamy. Add egg & beat well. Using a spatula, stir in date mixture & flour. Mix until well combined.

3. Spoon mixture into silicon moulds. Bake for 15mins.

南瓜麵條

 

Pumpkin Noodles  南瓜麵條

Ingredients

170g pumpkin puree
300g plain flour
1/4 tsp salt 

Method:
1. Mix all ingredients till a smooth dough is form.
2. Rest the dough for 40mins.
3. Use pasta machine to roll & cut into desired noodles.

Dorayaki


Dorayaki

Ingredients: 
1 egg
1.5 Tbsp sugar
100g plain flour
1 tsp baking powder
120ml soya milk
home made red bean paste

Method 
1. Mix all ingredients together in a large mixing bowl until smooth.
2. Heat up the pan & pour a portion of batter. Using a silicon spatula, flip the pancakes carefully when the bottom layer is cooked. Repeat until all batter is used up.
3. Fill the cooked pancakes with red bean fillings.

Chocolate Molten Cakes

 

Chocolate Molten Cakes

Ingredients
175g chocolate melted & cooled
2 Eggs, lightly beaten
25g salted butter
25g sugar
25g plain flour
1 tsp Rum

Method:
1. Cream butter & sugar together till light & fluffy.
2. Add the beaten eggs gradually, beating all the time, then add Rum & mix well. Sieve in the flour, fold well with a rubber spatula followed by the melted chocolate, fold well again.
3. Divide among cups.
4. Bake in a preheated oven at 190C for 8mins.

Banana Muffins

Banana Muffins

Ingredients:
Dry ingredients  
380g plain flour
2 tsp baking powder
2 tsp bicarbonate of soda
 

Wet ingredients
4 big ripe bananas , mashed
200g sugar

2 egg
160g Liv salted butter, melted
 

Peanut butter chips

Method :
1. Mix all the dry ingredients in a mixing bowl .
2. Mix all the wet ingredients in another bowl .
3. Pour (2) into (1). Stir in peanut butter chips.

4. Spoon batter into the cupcake liners. Bake in preheated oven @180 for 20mins.
